Ingredients
  

  • 2 cups cooked turkey, shredded or cubed
  • 1 turkey carcass or bones (optional for broth)
  • 6 cups chicken or turkey broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup noodles, rice, or potatoes (optional)
  • 1 tsp dried thyme

Instructions
 

  • If using bones, simmer them in water for 45 minutes to make broth. Strain and set aside.
  • Heat oil in a pot and sauté onions, carrots, and celery until softened.
  • Add garlic and cook for one minute.
  • Pour in broth, herbs, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add turkey and noodles or rice if using. Simmer until fully cooked.
  • Remove the bay leaf and adjust seasoning.
  • Serve hot with fresh parsley or crusty bread.

Notes

  • Use homemade broth for richer flavour.
  • Add potatoes for a thicker, heartier soup.
  • Adjust herbs based on preference.
