- 2 cups cooked turkey, shredded or cubed
- 1 turkey carcass or bones (optional for broth)
- 6 cups chicken or turkey broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup noodles, rice, or potatoes (optional)
- 1 tsp dried thyme
If using bones, simmer them in water for 45 minutes to make broth. Strain and set aside.
Heat oil in a pot and sauté onions, carrots, and celery until softened.
Add garlic and cook for one minute.
Pour in broth, herbs, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 15 minutes.
