  • 4 large russet potatoes
  • Vegetable, canola, or peanut oil for frying
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper (optional)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon dried rosemary or thyme (optional)

Instructions
 

  • Wash and scrub the potatoes thoroughly. Leave the skins on for a rustic homestyle appearance or peel them if preferred.
  • Using a mandoline slicer or sharp knife, cut the potatoes into ⅛-inch (3 mm) thick slices.
  • Place the slices in a bowl of cold water for 30 minutes to remove excess starch.
  • Drain the potatoes and pat them completely dry using clean kitchen towels or paper towels.
  • Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  • Carefully fry the potato slices in small batches for 4–6 minutes, turning occasionally until golden brown and crisp.
  • Transfer the chips to a paper towel-lined tray to drain excess oil.
  • While still warm, season immediately with sea salt and your favorite spices.
  • Allow the chips to cool for a few minutes to become even crispier before serving.
