Shruthi
Honeycomb Toffee is a golden, crunchy candy with a light, airy interior.
Sugar and golden syrup create a rich, caramelized sweetness.
Baking soda produces the tiny bubbles that give the candy its honeycomb texture.
The recipe requires only a few ingredients and no oven.
Chocolate dipping or drizzling makes the candy even more indulgent.
Allow the toffee to cool completely before breaking it into bite-sized pieces.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup golden syrup or light corn syrup
  • 2 tablespoons water
  • 2 teaspoons baking soda, sifted
  • Neutral oil or cooking spray, for greasing the pan
  • 150 g dark or milk chocolate
  • 1 teaspoon coconut oil, optional, to make the melted chocolate easier to drizzle

Instructions

  • Line a deep-sided baking tray or square baking pan with parchment paper. Lightly grease the parchment if needed to help prevent sticking.
Choose a tray with enough room for the candy to expand. Once the baking soda is added, the mixture increases significantly in volume.
  • Place the granulated sugar, golden syrup, and water in a heavy-bottomed saucepan.
Heat gently over medium heat, stirring until the sugar dissolves. Once the mixture begins boiling, stop stirring to help prevent unwanted sugar crystallization.
  • Allow the syrup to boil until it reaches approximately 300°F (149°C) on a candy thermometer, the hard-crack stage.
The mixture should have a rich golden-amber color. Watch it closely as it approaches the target temperature because caramel can burn quickly.
Hot sugar can cause serious burns, so keep children away from the cooking area and avoid touching or tasting the mixture.
  • Remove the saucepan from the heat immediately. Add the sifted baking soda and whisk quickly for just a few seconds.
The mixture will foam, expand, and become lighter in color. This is the reaction that creates the candy's characteristic honeycomb structure.
  • Immediately pour the foaming mixture onto the prepared tray. Do not spread or flatten it, as this can break the developing air bubbles.
Let the mixture settle naturally. Avoid handling the hot candy because it remains extremely hot even after it is removed from the stove.
  • Leave the honeycomb undisturbed at room temperature for approximately 45–60 minutes, or until it has completely hardened.
Do not refrigerate the candy while it is still hot. Sudden temperature changes and condensation can affect the finished texture.
  • Once the candy is completely cool and crisp, lift it from the parchment paper.
Break it into irregular bite-sized pieces using your hands or a sturdy knife. The inside should have a light, bubbly structure and a crisp snap.
  • Melt the chocolate gently using a microwave in short intervals or a double boiler. Stir until smooth.
Dip the honeycomb pieces halfway into the chocolate or drizzle it over the surface. Place the pieces on fresh parchment paper and allow the chocolate to set completely before serving.

Notes

  • Measure the baking soda accurately: Too much can create an unpleasant aftertaste.
  • Use a candy thermometer: Reaching the correct temperature is essential for a crisp result.
  • Prepare the tray in advance: The foaming mixture sets quickly once removed from the heat.
  • Choose a large saucepan: The candy expands dramatically when the baking soda is added.
  • Avoid stirring after boiling begins: This helps reduce the risk of sugar crystallization.
  • Do not flatten the mixture: Preserving the bubbles creates the characteristic honeycomb texture.
  • Keep moisture away: Humidity can make the candy sticky.
  • Store promptly: Place completely cooled pieces in an airtight container to help preserve their crunch.
