Ingredients
  

  • 2 honeynut squashes
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven:

  • Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Squash:

  • Slice the honeynut squash in half lengthwise and scoop out the seeds.

Season the Squash:

  • Place the squash halves cut side up on the baking sheet. Brush with olive oil, drizzle with maple syrup, and sprinkle with cinnamon, nutmeg, salt, and pepper.

Roast the Squash:

  • Roast in the oven for 25-30 minutes or until the flesh is fork-tender and caramelized around the edges.

Garnish and Serve:

  • Remove from the oven, sprinkle with fresh thyme if desired, and serve warm as a side dish or a standalone meal.

Notes

  • Honeynut squash does not require peeling as the skin becomes tender and edible when roasted.
  • To enhance the sweetness, add a drizzle of honey or brown sugar before roasting.
