  • ½ cup mayonnaise
  • 1 cup sharp cheddar cheese, freshly shredded
  • 2 tablespoons pickle juice
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ cup Hot Cheetos, finely crushed
  • 2 tablespoons fresh dill, chopped
  • 2 green onions, finely sliced

For the Topping

  • 1 cup Hot Cheetos, coarsely crushed
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons finely chopped dill pickles
  • Fresh dill
  • Sliced green onions
  • Optional sliced jalapeños

For Serving

  • Tortilla chips
  • Crackers
  • Pretzels
  • Cucumber slices
  • Celery sticks
  • Carrot sticks
  • Toasted baguette slices

Instructions

Soften the Cream Cheese

  • Remove the cream cheese from the refrigerator and allow it to soften at room temperature for approximately 20–30 minutes.
Softened cream cheese is much easier to mix and produces a smoother dip.

Prepare the Pickles

  • Finely chop the dill pickles.
Place them on a paper towel and gently press to remove excess moisture.
This helps prevent the finished dip from becoming watery.

Crush the Hot Cheetos

  • Place the Hot Cheetos in a resealable bag.
Crush them using a rolling pin or the bottom of a glass.
Create two different textures: finely crushed pieces for mixing into the dip and coarsely crushed pieces for the topping.

Make the Creamy Base

  • Add the softened cream cheese, sour cream, and mayonnaise to a medium mixing bowl.
Beat or stir until smooth and creamy.
Make sure there are no large lumps of cream cheese remaining.

Add the Seasonings

  • Add the garlic powder, onion powder, smoked paprika, black pepper, and chili powder.
    Mix thoroughly.
Taste the base before adding additional salt because the pickles, cheese, and Hot Cheetos already provide plenty of salty flavor.

Add the Pickles

  • Fold in the finely chopped dill pickles.
Stir gently so the pickle pieces remain distributed throughout the dip.

Add Pickle Juice

  • Add approximately 2 tablespoons of pickle juice.
    Mix well.
The pickle juice gives the dip a bright, tangy flavor and helps balance the richness of the cream cheese and mayonnaise.

Add the Hot Cheetos

  • Fold the finely crushed Hot Cheetos into the dip.
    Mix until evenly distributed.
The crushed Hot Cheetos will add both color and spicy cheesy flavor throughout the dip.

Chill the Dip

  • Cover the bowl tightly with plastic wrap or transfer the dip to an airtight container.
Refrigerate for at least 30 minutes.
Chilling allows the flavors to develop and gives the dip a thicker consistency.

Prepare the Topping

  • Just before serving, crush another portion of Hot Cheetos into coarse pieces.
Keep the pieces large enough to provide noticeable crunch.

Garnish

  • Transfer the chilled dip to a serving bowl.
Sprinkle the crushed Hot Cheetos generously over the top.
Add shredded cheddar, chopped pickles, fresh dill, and sliced green onions.
For extra heat, add a few thinly sliced jalapeños

Serve

  • Serve the dip immediately with tortilla chips, crackers, pretzels, cucumber slices, celery, carrot sticks, or toasted baguette.
For maximum crunch, add the Hot Cheetos topping immediately before serving.

Notes

  • Pickles: Dill pickles provide the best tangy contrast, but spicy or garlic pickles can also be used.
  • Cream cheese: Full-fat cream cheese gives the richest texture.
  • Cheese: Sharp cheddar adds stronger flavor, while mild cheddar produces a gentler dip.
  • Heat level: Adjust the amount of Hot Cheetos and chili powder according to your preferred spice level.
  • Pickle juice: Add gradually because different pickle brands have different levels of acidity and saltiness.
  • Texture: Finely crushed Hot Cheetos blend into the dip, while coarse pieces provide more crunch.
  • Topping: Add the crunchy Hot Cheetos topping immediately before serving to prevent sogginess.
  • Storage: Refrigerate leftovers in an airtight container and consume within 3 days.
