Cuisine Mexican, tex-mex
- 2 cups fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes with green chilies (like Rotel)
- 1/4 cup chopped jalapeños (adjust for heat)
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Tortilla chips or bread for serving
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cream cheese and sour cream until smooth.
Transfer the mixture to a baking dish and spread evenly.
Add spinach, cheeses, tomatoes, jalapeños, and spices. Stir well to blend.
Bake for 20 minutes, or until the top is bubbly and lightly golden.
Serve hot with tortilla chips, bread cubes, or veggie sticks.
- For a milder dip, reduce or omit jalapeños.
- You can substitute Greek yogurt for sour cream for a lighter version.
- Fresh spinach adds vibrant color and texture, but frozen works great too.
- Add corn kernels or black beans for extra Mexican flair.
- Store leftovers in the fridge and reheat gently before serving.
