Ingredients
  

  • 2 cups fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes with green chilies (like Rotel)
  • 1/4 cup chopped jalapeños (adjust for heat)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortilla chips or bread for serving

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, combine cream cheese and sour cream until smooth.
  • Transfer the mixture to a baking dish and spread evenly.
  • Add spinach, cheeses, tomatoes, jalapeños, and spices. Stir well to blend.
  • Bake for 20 minutes, or until the top is bubbly and lightly golden.
  • Serve hot with tortilla chips, bread cubes, or veggie sticks.

Notes

  • For a milder dip, reduce or omit jalapeños.
  • You can substitute Greek yogurt for sour cream for a lighter version.
  • Fresh spinach adds vibrant color and texture, but frozen works great too.
