Ingredients

For the Fruit Filling

  • 4 cups fresh or frozen peaches, sliced
  • 1 1/2 cups fresh or frozen huckleberries
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

For the Biscuit Topping

  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup milk

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish or a similar-sized ovenproof dish.
  • Wash and slice the peaches, removing the pits. If using frozen peaches or huckleberries, thaw them partially and drain any excess liquid if necessary.
Place the peaches and huckleberries in a large mixing bowl.
  • Add the sugar, cornstarch, vanilla extract, cinnamon, and lemon juice to the fruit. Stir gently until the fruit is evenly coated.
The cornstarch helps thicken the juices released during baking, giving the cobbler a rich, spoonable filling.
  • Pour the fruit mixture into the prepared baking dish and spread it into an even layer. Make sure the berries and peach slices are distributed throughout the dish.
  • In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold butter cubes and cut them into the flour mixture using a pastry cutter or your fingertips until coarse crumbs form.
Pour in the milk and stir gently until a soft, slightly sticky dough develops. Avoid overmixing to keep the topping tender.
  • Drop spoonfuls of biscuit dough over the fruit filling, leaving small gaps between them. The dough will expand as it bakes, creating a rustic cobbler topping.
  • Bake for 45–50 minutes, or until the biscuit topping is golden brown and the fruit filling bubbles around the edges.
If the topping browns too quickly, loosely cover the dish with foil for the remainder of the cooking time.
  • Remove the cobbler from the oven and allow it to rest for 10–15 minutes. This helps the fruit filling thicken slightly.
Serve warm in individual bowls with vanilla ice cream or whipped cream for a delicious homemade dessert.

Notes

  • Use ripe peaches: Ripe but firm peaches provide sweetness while holding their shape during baking.
  • Choose good-quality berries: Fresh huckleberries offer a wonderful flavor, but frozen berries are convenient and work well.
  • Adjust the sugar: Taste the fruit mixture and adjust the sugar depending on the sweetness of the peaches and berries.
  • Drain excess liquid: Thawed frozen fruit may release extra moisture, so drain it when necessary.
  • Keep the butter cold: Cold butter helps create a tender, biscuit-like topping.
  • Avoid overmixing: Mix the biscuit dough only until the ingredients come together.
  • Check the center: The topping should be cooked through, and the fruit should be bubbling.
  • Store leftovers safely: Refrigerate cooled cobbler in a covered container for 3–4 days.
