Ingredients
  

  • 6 small corn tortillas (cut into pieces)
  • 1 cup cooked ham (diced)
  • 1½ cups shredded cheese (cheddar or Mexican blend)
  • 5 large eggs
  • 1½ cups milk
  • 1 cup salsa or ranchero sauce
  • ½ cup diced tomatoes
  • ¼ cup chopped onions
  • 1 tsp cumin
  • ½ tsp chili powder
  • 2 tbsp oil or butter

Instructions
 

  • Preheat oven to 180°C (350°F) and grease a baking dish.
  • Lightly sauté onions in oil until soft.
  • Layer half the tortilla pieces in the dish.
  • Add half the ham, onions, tomatoes, and cheese.
  • Repeat layers with remaining ingredients.
  • In a bowl, whisk eggs, milk, spices, salt, and pepper.
  • Pour the mixture evenly over the layered ingredients.
  • Spoon salsa or ranchero sauce on top.
  • Bake uncovered for 40–45 minutes until eggs are set.
  • Let cool slightly, then garnish and serve.
