Ingredients
  

  • 2 cups cooked chickpeas
  • ½ cup tahini
  • ¼ cup fresh lemon juice
  • 2 garlic cloves
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • 3–5 tablespoons ice-cold water
  • 1 tablespoon chopped fresh parsley, optional
  • Paprika, for garnish
  • Extra olive oil, for serving

Instructions
 

  • Drain and rinse the chickpeas thoroughly.Remove loose skins if you want exceptionally smooth hummus.For canned chickpeas, rinse them under cool running water.
  • Add tahini and lemon juice to a food processor.Blend them for approximately one minute.The mixture should become lighter and creamy.
  • Add garlic, cumin, and salt to the processor.Blend everything until the garlic becomes finely incorporated.
  • Add the chickpeas gradually while blending.Scrape down the sides whenever necessary.Continue processing until the mixture becomes thick and smooth.
  • Slowly add ice-cold water while the processor runs.Add one tablespoon at a time until the hummus reaches your preferred consistency.Continue blending for another two minutes for extra smoothness.
  • Transfer the hummus to a serving bowl.Create a shallow swirl using the back of a spoon.Drizzle olive oil over the top.Finally, garnish with paprika and fresh parsley.
