Indian Eggplant

Ingredients
  

  • 500 g eggplant or brinjal
  • 2 tablespoons vegetable oil
  • 1 tablespoon ghee, optional
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • ½ teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • 1 teaspoon Kashmiri chili powder
  • ½ teaspoon amchur powder, optional
  • Salt to taste
  • ½ cup water, as needed
  • 1 teaspoon lemon juice

Instructions
 

  • Wash the eggplant thoroughly and remove the stem.
  • Place the pieces in a bowl of lightly salted water for about 10 minutes if desired. Drain and pat them dry before cooking.
  • Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  • Remove the eggplant and set it aside.
  • Add cumin seeds and let them sizzle.
  • If using mustard seeds and curry leaves, add them now and allow them to become fragrant.
  • Sauté for approximately 1–2 minutes until fragrant and the raw smell disappears.
  • Cook until they become soft and the mixture begins to thicken.
  • Return the sautéed eggplant to the pan.
  • Add about ½ cup water and stir.
  • Stir occasionally and check the consistency.
  • If necessary, add a small amount of water during cooking.
  • Cook uncovered for another 2–3 minutes.
  • Garnish with fresh cilantro.
  • Serve hot with rice or Indian flatbreads.

Notes

  • Choose fresh, firm eggplant without large soft spots.
  • Smaller or medium eggplants generally have a tender texture.
  • Cut the pieces evenly so they cook at the same rate.
  • Salting and soaking is optional but can help with preparation and browning.
  • Do not add too much water because eggplant releases moisture while cooking.
  • Cook gently so the eggplant becomes tender without completely falling apart.
  • Adjust chili powder according to your preferred heat level.
  • Fresh lemon juice added at the end brightens the finished curry.
