For the Chicken
- 2 lb (900 g) boneless chicken thighs or chicken breast, cut into medium pieces
- ½ cup plain yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon ginger, finely grated
- 1 tablespoon garlic, minced
- 1½ teaspoons ground cumin
- 1½ teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1½ teaspoons Kashmiri chili powder or mild chili powder
- 1 teaspoon garam masala
- ½ teaspoon freshly ground black pepper
For Cooking
- 2 tablespoons vegetable oil or neutral cooking oil
- 1 medium onion, finely sliced
- 1 green chili, finely chopped, optional
- ½ teaspoon cumin seeds
- ½ teaspoon garam masala
- ¼ cup water, if needed
For Garnishing
- ¼ cup fresh cilantro, chopped
- 1 tablespoon fresh lemon juice
- Fresh cilantro leaves, for serving

Make the Marinade
Add yogurt, lemon juice, ginger, garlic, cumin, coriander, turmeric, chili powder, garam masala, salt, and black pepper to the chicken. Mix thoroughly until every piece is evenly coated.
Start Cooking
Heat the oil in a large heavy-bottomed skillet or pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.Add the sliced onion and cook for approximately 5–7 minutes, stirring occasionally, until softened and lightly golden.
