For the Pork Satay
- 700 g boneless pork shoulder or pork loin
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- ½ teaspoon turmeric
- ½ teaspoon ground white or black pepper
- ½ teaspoon salt, or to taste
For the Peanut Sauce
- ¾ cup smooth or crunchy peanut butter
- ½ cup coconut milk
- 2 tablespoons sweet soy sauce
- 1 tablespoon brown sugar
- 1 garlic clove, finely minced
- ½ teaspoon chili flakes or sambal
- ¼ cup warm water, as needed

Prepare the Pork
Trim excess fat from the pork and cut it into small, bite-sized pieces approximately 2–3 cm in size.Keeping the pieces relatively uniform helps them cook evenly.
Make the Marinade
In a large bowl, combine the garlic, ginger, soy sauce, sweet soy sauce, lime juice, brown sugar, oil, coriander, cumin, turmeric, pepper, salt, and chili flakes.Mix thoroughly.
Marinate the Pork
Add the pork pieces to the marinade and toss until every piece is well coated.Cover the bowl and refrigerate for at least 2 hours. For deeper flavor, marinate for up to 8 hours.

Heat the Grill

Grill the Satay
