Ingredients
  

  • 2 cups jasmine rice (or basmati rice)
  • 2 tbsp coconut oil or vegetable oil
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 tsp grated ginger
  • 1 tsp turmeric powder
  • 1 stalk lemongrass (lightly crushed)
  • 1 pandan leaf (optional)
  • 2 cups coconut milk
  • 1 cup water or chicken broth
  • 1 tsp salt
  • ½ tsp white pepper

Instructions
 

  • Wash the rice under cold water until the water runs clear. Drain well.
  • Heat coconut oil in a pot over medium heat. Add chopped onion, garlic, and ginger. Sauté for about 2–3 minutes until fragrant.
  • Stir in turmeric powder and mix well so the spices release their aroma.
  • Add the rinsed rice, coconut milk, water (or broth), lemongrass, pandan leaf, salt, and pepper. Stir gently.
  • Bring to a gentle boil, then cover and reduce heat to low. Cook for 15–18 minutes until the rice is tender and the liquid is absorbed.
  • Remove lemongrass and pandan leaf. Fluff the rice with a fork and serve with your favorite toppings.
