- 1 lb boneless chicken breasts or thighs
- 2 tablespoons jerk seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 12 oz penne pasta
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 1 cup mozzarella cheese, shredded
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Set Instant Pot to sauté mode. Heat olive oil.
Season chicken with jerk seasoning, then sear until golden. Remove and set aside.
Add onion, garlic, and bell pepper. Sauté for 2 minutes.
Pour in chicken broth and add pasta. Stir well.
Place chicken back on top. Close lid and set to pressure cook for 6 minutes.
Quick-release pressure, remove chicken, slice or shred, then return to pot.
Stir in cream, Parmesan, and mozzarella until sauce is creamy.
Garnish with parsley before serving.
- Adjust jerk seasoning for spice level.
- Thighs add more flavour than breasts.
- Use gluten-free pasta if needed.
- Swap mozzarella with cheddar for a sharper flavour.
- Add spinach for extra nutrition.
