Ingredients
  

  • 2 lbs pork shoulder or pork butt, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles, seeded
  • 2 dried ancho chiles, seeded
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 8 cups chicken broth
  • 2 cans (15 oz each) hominy, drained and rinsed
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper

Instructions
 

  • Soak dried chiles in hot water for 15 minutes until softened, then blend into a smooth paste.
  • Set the Instant Pot to sauté mode and heat oil. Brown the pork in batches.
  • Add onion and garlic; sauté until fragrant.
  • Stir in chile paste, cumin, and oregano.
  • Add broth, hominy, salt, and pepper.
  • Seal and cook on high pressure for 35 minutes.
  • Allow natural pressure release for 10 minutes, then quick release.
  • Adjust seasoning and serve hot with toppings.

Notes

  • Pork shoulder yields the most tender results.
  • Chile heat can be adjusted by adding or reducing chiles.
  • Hominy adds texture and traditional flavour.
  • Broth can be thinned with water if desired.
  • Flavours deepen even more the next day.
