Ingredients
  

  • 2 boneless chicken breasts
  • 1 cup salsa (mild or spicy)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions
 

  • Place chicken breasts into the Instant Pot.
  • Add salsa, chili powder, cumin, garlic powder, salt, and pepper
  • Close the lid and set the Instant Pot to manual high pressure for 12 minutes.
  • Allow natural release for 5 minutes, then quick release the remaining pressure.
  • Shred chicken with two forks and mix with the sauce
  • Top with shredded cheese if desired and garnish with fresh cilantro.

  • Use store-bought or homemade salsa.
  • Adjust spice level with mild or hot salsa.
  • Boneless thighs work as an alternative to breasts.
  • Leftovers are perfect for tacos, burritos, or salads.
