Ingredients

For the Cake

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup Irish cream liqueur
  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream

For the Glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons Irish cream liqueur
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 175°C (350°F). Grease and line a 9x5-inch loaf pan with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, beat the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and sour cream.
  • In a small bowl, combine the Irish cream and milk.
  • Add the dry ingredients to the butter mixture in three additions, alternating with the Irish cream mixture. Mix gently until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  • Mix the glaze ingredients until smooth, then drizzle over the cooled loaf cake.
  • Slice and serve.

Notes

  • Use room temperature butter, eggs, and milk for a smoother batter.
  • Do not overmix the batter, or the cake may turn dense.
  • Line the loaf pan with parchment for easier removal.
  • Sour cream helps keep the crumb moist and tender.
  • Let the cake cool fully before glazing for the best finish.
  • The glaze consistency can be adjusted with more powdered sugar or more Irish cream.
  • This cake tastes even better the next day as the flavors deepen.
  • Store in an airtight container to maintain freshness.
