For the Salad

  • 6 cups rustic Italian bread, cut into cubes
  • 2 cups fresh strawberries, hulled and halved
  • 3 large ripe tomatoes, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • ¼ small red onion, thinly sliced
  • ½ cup fresh basil leaves
  • 2 tablespoons fresh parsley, chopped

For the Balsamic Dressing

  • ⅓ cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Spread the bread cubes on a baking tray and toast them for 8–10 minutes until lightly golden and crisp. Allow them to cool.
  • Wash and prepare the strawberries, tomatoes, cucumber, onion, basil, and parsley.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper until well combined.
  • Place the toasted bread, strawberries, tomatoes, cucumber, onion, basil, and parsley into a large serving bowl.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Let the salad rest for 10–15 minutes so the bread absorbs the dressing while retaining a slight crunch.
  • Sprinkle with feta cheese and toasted pine nuts, if using, garnish with additional basil, and serve immediately.
