For the Seafood

  • ½ pound shrimp, peeled and deveined
  • ½ pound calamari rings
  • ½ pound bay scallops
  • ½ pound cooked mussels (optional)

For the Marinade

  • ⅓ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes

Additional Ingredients

  • ½ cup celery, thinly sliced
  • ¼ cup red onion, finely sliced
  • Lemon wedges for serving

Instructions
 

  • Bring a large pot of salted water to a gentle boil. Cook shrimp for 2–3 minutes until pink. Remove and cool immediately.
  • In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, parsley, basil, oregano, salt, pepper, and red pepper flakes.
  • Add the cooled seafood, celery, and red onion to the marinade. Toss gently to coat evenly.
  • Cover and refrigerate for at least 2 hours to allow the flavors to develop.
  • Transfer to a serving platter, garnish with fresh parsley and lemon wedges, and serve chilled.
