Italian Sausage Filling

  • 1 pound (450 g) Italian sausage (mild or spicy), casings removed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup marinara sauce
  • ½ cup finely chopped bell pepper
  • ½ cup chopped mushrooms
  • ½ teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Cheese Topping

  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Slice each zucchini lengthwise and scoop out the centers, leaving about a ¼-inch border. Reserve the zucchini flesh and chop it finely.
  • Brush the zucchini shells with olive oil and season lightly with salt and pepper.
  • Arrange the zucchini on a baking tray and bake for 10 minutes.
  • Meanwhile, heat olive oil in a large skillet over medium heat.
  • Cook the Italian sausage until browned, breaking it into small crumbles.
  • Add the onion, garlic, mushrooms, bell pepper, and chopped zucchini flesh. Sauté until softened.
  • Stir in the marinara sauce, oregano, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
  • Fill each zucchini boat generously with the sausage mixture.
  • Bake for 15–20 minutes until the cheese is melted, bubbly, and lightly golden.
  • Garnish with chopped parsley and fresh basil before serving.
