Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp butter (optional)
  • 3 cups sliced mushrooms (button or cremini)
  • 4 cups fresh spinach (or 1 bag)
  • 3–4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp grated Parmesan (optional)

Instructions
 

  • Heat olive oil (and butter, if using) in a large skillet over medium heat.
  • Add the sliced mushrooms and sauté for 5–7 minutes until browned and softened.
  • Stir in the garlic and cook for another minute until fragrant.
  • Add Italian seasoning, salt, and pepper.
  • Add the fresh spinach and cook until wilted, stirring gently.
  • Drizzle balsamic vinegar or lemon juice over the mixture and toss.
  • Remove from heat and sprinkle Parmesan if desired.

Notes

  • Use cremini mushrooms for a richer, deeper flavor.
  • Fresh spinach works best, but frozen spinach can be used if drained well.
  • Add cherry tomatoes for color and sweetness.
  • A splash of white wine enhances the flavor beautifully.
  • Replace Parmesan with nutritional yeast for a dairy-free version.
