- 2 boneless, skinless chicken breasts (or thighs)
- 2 ripe peaches (sliced)
- 2 jalapeños (sliced)
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic (minced)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp honey
- 1 tbsp balsamic vinegar
- ½ tsp red pepper flakes (optional)
- Fresh cilantro or basil (for garnish)
Marinate the Chicken: Season the chicken with salt, black pepper, smoked paprika, and red pepper flakes. Let it marinate for 10 minutes.
Sear the Chicken: Heat olive oil and butter in a skillet over medium heat. Cook the chicken for 4-5 minutes per side until golden brown.
Prepare the Glaze: In the same skillet, add garlic, peaches, jalapeños, honey, and balsamic vinegar. Cook until peaches soften and caramelize.
Combine & Cook: Return the chicken to the skillet and let it simmer in the sauce for 5 minutes until fully cooked.
Serve Hot: Garnish with fresh cilantro or basil and enjoy with rice, quinoa, or a fresh salad.
