For the Chicken
- 3 lb (1.4 kg) bone-in chicken thighs and drumsticks
- 1 tablespoon lime juice or lemon juice
- 1 teaspoon paprika
- 1 teaspoon allspice powder
- 1 teaspoon dried thyme

- ½ teaspoon onion powder
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 Scotch bonnet pepper, finely chopped or left whole for less heat
- 2 scallions, chopped
For the Stew
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 3 garlic cloves, minced
- 1 medium bell pepper, sliced
- 2 medium tomatoes, chopped
- 2 scallions, chopped
- 2 sprigs fresh thyme
- 1 tablespoon tomato paste
- 1 tablespoon brown sugar
- 1 Scotch bonnet pepper, optional

Clean and Prepare the Chicken
Pat the chicken pieces dry with paper towels.
