Ingredients
  

  • 1 medium green cabbage, approximately 2 lb (900 g)
  • 2 medium carrots, thinly sliced
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 scallions, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon fresh thyme leaves
  • ½ Scotch bonnet pepper, finely minced, optional
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon salt, or to taste
  • ½ cup vegetable or chicken broth
  • 1 tablespoon butter, optional
  • 1 tablespoon fresh lime juice, optional

Instructions
 

Prepare the Cabbage

  • Remove any damaged outer leaves from the cabbage.
    Cut it into quarters, remove the tough core, and slice the cabbage into thin strips.
    Rinse thoroughly and drain.

Prepare the Vegetables

  • Slice the carrots, onion, and bell peppers.
    Chop the scallions and mince the garlic.
    If using Scotch bonnet pepper, handle it carefully and wash your hands thoroughly afterward.

Heat the Oil

  • Heat the vegetable oil in a large skillet or Dutch oven over medium heat.
    Add the onion, garlic, and scallions.
    Cook for approximately 2–3 minutes, stirring frequently, until fragrant.

Add the Carrots and Peppers

  • Add the carrots and bell peppers.
    Cook for another 3–4 minutes, allowing the vegetables to soften slightly while maintaining some color and texture.

Add the Cabbage

  • Add the sliced cabbage to the pan.
    It may seem like a large amount initially, but cabbage will shrink considerably as it cooks.
    Toss everything together.

Cover and Cook

  • Cover the pan and reduce the heat to medium-low.
    Cook for approximately 8–12 minutes, stirring occasionally.
    The cabbage should become tender while retaining a slight bite.

Finish the Dish

  • Remove the lid and cook for another 2–3 minutes if there is excess liquid.
    Stir in butter if desired for extra richness.
    Add a small squeeze of fresh lime juice for brightness.

Taste and Adjust

  • Taste the cabbage and adjust the salt, black pepper, or Scotch bonnet pepper as desired.

Serve

  • Transfer to a serving bowl and garnish with fresh scallions or thyme.
    Serve immediately alongside your favorite Jamaican dishes.

Notes

  • Don't overcook the cabbage if you prefer a little texture.
  • Slice the cabbage evenly so it cooks at approximately the same rate.
  • Cabbage shrinks significantly during cooking, so don't worry if the pan initially looks full.
  • Scotch bonnet is optional but adds authentic Jamaican heat.
  • Use fresh thyme when possible for a more aromatic flavor.
  • Avoid adding too much broth because the cabbage naturally releases moisture.
  • Add lime juice at the end to preserve its fresh flavor.
  • Jamaican Cabbage is best served warm and freshly cooked.
