Ingredients
  

For the Goat and Marinade

  • 3 pounds (1.4 kg) goat meat, cut into medium pieces
  • 3 tablespoons Jamaican curry powder
  • 1 teaspoon salt, or to taste
  • 1 tablespoon fresh ginger, grated
  • 1½ tablespoons garlic, minced
  • 3 scallions, chopped
  • 1 medium onion, chopped
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon ground allspice
  • 1 tablespoon lime juice
  • 1 Scotch bonnet pepper, whole or chopped according to your preferred heat level

For Cooking

  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 scallions, chopped
  • 2–3 sprigs fresh thyme
  • 1 teaspoon ground allspice
  • 3–4 cups beef or chicken broth, or water
  • 2 medium potatoes, peeled and cut into chunks
  • 1 tablespoon browning sauce, optional
  • Salt and black pepper, to taste

Garnishes

  • Fresh thyme
  • Sliced scallions
  • Fresh parsley
  • Lime wedges

Instructions
 

Prepare the Goat Meat

  • Trim away any excess fat from the goat meat if desired.
    Rinse according to your preferred kitchen practice and pat the meat thoroughly dry before seasoning.
    Cut larger pieces into even portions for more consistent cooking.

Season the Goat

  • Place the goat meat in a large bowl.
    Add the Jamaican curry powder, salt, black pepper, ginger, garlic, scallions, chopped onion, thyme, allspice, lime juice, and Scotch bonnet pepper.
    Massage the seasoning thoroughly into the meat.

Marinate

  • Cover the bowl and refrigerate for at least 4 hours.
    For the deepest flavor, marinate the goat overnight.

Bring the Meat Toward Room Temperature

  • Remove the marinated goat from the refrigerator approximately 20–30 minutes before cooking.
    This helps it cook more evenly.

Heat the Oil

  • Place a large heavy-bottomed pot or Dutch oven over medium heat.
    Add the vegetable oil.

Bloom the Curry Powder

  • Add the additional tablespoon of Jamaican curry powder to the hot oil.
    Stir continuously for approximately 20–30 seconds until fragrant.
    Do not allow the curry powder to burn.

Add the Goat Meat

  • Add the marinated goat meat to the pot.
    Reserve any remaining marinade.
    Stir the meat to coat it evenly with the fragrant curry oil.

Add Aromatics

  • Add the sliced onion, minced garlic, scallions, and fresh thyme.
    Cook for another 2–3 minutes until fragrant.

Add the Liquid

  • Pour in enough broth or water to mostly cover the goat meat.
    Add the allspice and optional browning sauce.
    Bring the mixture to a gentle boil.

Check the Liquid

  • Check the curry occasionally.
    Add additional hot broth or water if the liquid reduces too much.
    Avoid adding excessive liquid at once.

Add the Potatoes

  • Once the goat has begun to soften, add the potato chunks.
    Stir gently.

Control the Heat

  • If you used a whole Scotch bonnet pepper, carefully remove it before serving.
    Avoid breaking the pepper unless you want the curry to become significantly hotter.

Rest the Curry

  • Turn off the heat.
    Allow the curry to rest for approximately 10 minutes before serving.
    This allows the flavors to settle.

Garnish and Serve

  • Sprinkle with fresh thyme, scallions, or parsley.
    Serve hot with Jamaican Rice and Peas, plain rice, roti, or fried plantains.
