Ingredients
  

For the Chicken and Marinade

  • 2½ pounds (1.1 kg) chicken, cut into medium pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried or fresh thyme
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 scallions, chopped
  • ½ medium onion, chopped
  • 1 tablespoon lime juice

For Cooking

  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 2 scallions, chopped
  • 3 cloves garlic, minced
  • 1 small Scotch bonnet pepper, whole
  • 2 medium potatoes, peeled and cut into chunks
  • 1 medium carrot, sliced, optional
  • 1 teaspoon fresh thyme leaves
  • 2–3 cups chicken broth or water
  • Salt and black pepper, to taste

Instructions
 

Clean and Prepare the Chicken

  • Trim any excess fat from the chicken.
    Wash or rinse according to your preferred kitchen practice, then pat the chicken thoroughly dry before seasoning.
    Cut large pieces into smaller serving portions if necessary.

Season the Chicken

  • Place the chicken in a large bowl.
    Add the curry powder, salt, black pepper, thyme, garlic, ginger, scallions, onion, lime juice, and optional allspice.
    Massage the seasonings thoroughly into the chicken.

Marinate

  • Cover the bowl and refrigerate for at least 1 hour.
    For deeper flavor, marinate for 4–8 hours.

Heat the Oil

  • Place a large heavy-bottomed pot or Dutch oven over medium heat.
    Add the vegetable oil.

Bloom the Curry

  • Add the additional tablespoon of Jamaican curry powder to the hot oil.
    Stir continuously for approximately 20–30 seconds until fragrant.
    This is sometimes referred to as “burning the curry,” but do not allow the spices to actually burn.

Add the Chicken

  • Add the marinated chicken pieces to the pot.
    Reserve any excess marinade if desired.
    Stir the chicken to coat it in the fragrant curry oil.

Add Tomato Paste

  • If using tomato paste, add it now.
    Cook for approximately 1 minute to deepen its flavor.

Add the Potatoes

  • Add the potato chunks and optional carrot.
    Stir them gently to coat with the curry mixture.

Add the Liquid

  • Pour in enough chicken broth or water to partially cover the chicken and vegetables.
    Avoid adding too much liquid because Jamaican Curry Chicken should have a rich, flavorful sauce rather than a thin soup.

Simmer the Curry

  • Bring the mixture to a gentle boil.
    Reduce the heat to low or medium-low.
    Cover partially and simmer for approximately 30–40 minutes.

Check the Potatoes

  • The potatoes should become fork-tender.
    They will also release starch, naturally helping to thicken the curry sauce.

Check the Chicken

  • The chicken should be fully cooked and tender. For safety, chicken should reach an internal temperature of 165°F (74°C) at its thickest part.

Rest Briefly

  • Turn off the heat.
    Allow the curry to rest for approximately 5–10 minutes before serving so the flavors can settle.

Garnish and Serve

  • Garnish with fresh thyme, scallions, or parsley.
    Serve hot with Jamaican Rice and Peas, steamed rice, roti, fried plantains, or a fresh salad.

Notes

  • Chicken: Bone-in chicken provides excellent flavor, although boneless chicken can also be used.
  • Curry powder: Jamaican-style curry powder gives the most characteristic flavor.
  • Marinating: Longer marinating creates deeper flavor.
  • Scotch bonnet: Keeping it whole adds aroma without making the entire dish extremely spicy.
  • Potatoes: Potatoes naturally help thicken the sauce.
  • Curry technique: Briefly heating the curry powder in oil releases its aroma.
  • Liquid: Add liquid gradually to maintain a thick, rich sauce.
  • Resting: A short resting period helps the flavors develop before serving.
