Ingredients
  

  • 4 tablespoons ground turmeric
  • 3 tablespoons ground coriander
  • 2 tablespoons ground cumin
  • 1 tablespoon ground fenugreek
  • 1 tablespoon ground mustard
  • 2 teaspoons ground allspice
  • 2 teaspoons ground ginger
  • 1½ teaspoons ground black pepper
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground nutmeg
  • 1 teaspoon salt, optional

Instructions
 

Measure the Spices

  • Measure all the spices carefully into a clean, dry bowl.
    Using fresh spices will provide the strongest and most aromatic flavor.

Check the Ingredients

  • Make sure the ground spices are free from moisture and clumps.
    Break apart any small lumps with a spoon.

Combine the Spices

  • Add the turmeric, coriander, cumin, fenugreek, mustard, allspice, ginger, black pepper, cinnamon, cardamom, and nutmeg to the bowl.

Add Salt

  • Add the optional salt.
    You may also leave out the salt and season individual recipes separately

Mix Thoroughly

  • Whisk or stir the spices together until the color and texture are completely uniform.
    Make sure the spices are evenly distributed.

Toast Gently

  • Stir constantly for approximately 1–2 minutes until fragrant.
    Do not allow the spices to burn.

Cool Completely

  • If you toasted the spices, transfer them to a plate or bowl.
    Allow the mixture to cool completely before storing.

Store the Curry Powder

  • Transfer the spice blend to a clean, dry, airtight glass jar.
    Store it away from direct sunlight and heat.

Use as Desired

  • Use approximately 1–2 tablespoons for a family-sized curry, adjusting according to your recipe and personal taste.
