For the Snapper
- 2 whole red snapper, approximately 1–1¼ lb (450–550 g) each, cleaned and scaled
- 1 tablespoon fresh lime juice
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon allspice
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried thyme
- 3 garlic cloves, minced
- 2 scallions, finely chopped
- 1 Scotch bonnet pepper, finely minced, optional

Prepare the Snapper
