Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 6 cups vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 cup small pasta (ditalini, elbow macaroni, or small shells)
  • 2 cups baby spinach
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped, for garnish

Instructions
 

  • Heat the olive oil in a large soup pot over medium heat.
  • Add the onion, carrots, and celery. Cook for about 8 minutes until softened.
  • Stir in the garlic and cook for 1 minute until fragrant.
  • Add the zucchini and green beans, cooking for another 5 minutes.
  • Mix in the tomato paste and cook for 2 minutes.
  • Pour in the diced tomatoes and vegetable broth.
  • Add the cannellini beans, kidney beans, oregano, basil, Italian seasoning, and bay leaf.
  • Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
  • Add the pasta and cook until al dente according to the package instructions.
  • Remove the bay leaf, then stir in the Parmesan cheese.
  • Taste and adjust the seasoning with salt and pepper.
  • Serve hot, garnished with fresh herbs and extra Parmesan cheese.
