Ingredients
  

For the Tofu

  • 14 ounces (400 g) firm or medium-firm tofu
  • ½ cup (60 g) potato starch
  • Vegetable oil, for frying

For the Agedashi Sauce

  • 1 cup (240 ml) dashi stock
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 teaspoon sugar, optional

For the Garnish

  • 2 tablespoons finely grated daikon
  • 1 teaspoon freshly grated ginger
  • 2 green onions, thinly sliced
  • 1 tablespoon bonito flakes, optional

Instructions
 

Choose the Tofu

  • Use firm or medium-firm tofu.
    Avoid very soft silken tofu because it can be difficult to handle during frying.
    Drain the tofu thoroughly.

Press the Tofu

  • Wrap the tofu in several layers of paper towel or a clean kitchen towel.
    Place a light weight on top and allow it to drain for approximately 15–20 minutes.
    The goal is to remove excess moisture without crushing the tofu.

Cut the Tofu

  • Cut the tofu into approximately 1-inch cubes.
    Try to keep the pieces similar in size so they cook evenly.

Prepare the Garnishes

  • Grate the daikon using a fine grater.
    Gently squeeze out some of the excess liquid.
    Grate the fresh ginger.
    Slice the green onions thinly.
    Set everything aside.

Prepare the Sauce

  • Add the dashi, soy sauce, mirin, and optional sugar to a small saucepan.
    Bring the mixture to a gentle simmer.
    Cook for approximately 2–3 minutes.
    Keep the sauce warm while frying the tofu.

Coat the Tofu

  • Place the potato starch in a shallow bowl.
    Coat each tofu cube lightly on all sides.
    Shake off excess starch.
    Do not coat the tofu too far in advance because the starch can become wet and sticky.

Heat the Oil

  • Pour approximately 1½–2 inches of vegetable oil into a deep skillet or saucepan.
    Heat the oil to approximately 350°F (175°C).
    Maintain a steady temperature throughout frying

Fry the Tofu

  • Carefully place the coated tofu pieces into the hot oil.
    Do not overcrowd the pan.
    Fry for approximately 3–4 minutes, turning occasionally, until the exterior becomes lightly golden and crisp.

Drain the Tofu

  • Remove the fried tofu using a slotted spoon or spider strainer.
    Place the pieces on a wire rack or paper towels to drain briefly.
    Avoid stacking them because this can soften the crispy coating.

Assemble the Dish

  • Place the crispy tofu cubes into individual serving bowls.
    Pour the warm dashi sauce around and partially over the tofu.
    Do not completely submerge the tofu if you want to preserve some of its crisp texture.

Serve Immediately

  • Agedashi Tofu is best served immediately while the tofu is still warm and crisp.
    Enjoy it as an appetizer, side dish, or part of a Japanese-style meal.

Notes

  • Dry the tofu well: Excess water can cause dangerous oil splattering and prevents the starch from adhering properly.
  • Use the right tofu: Firm or medium-firm tofu is easier to fry and handle.
  • Potato starch is ideal: It produces the characteristic light, crisp coating.
  • Do not overcrowd the pan: Too many tofu pieces can lower the oil temperature.
  • Keep the sauce warm: Cold sauce can quickly cool the fried tofu.
  • Drain daikon: Removing excess liquid prevents the dish from becoming watery.
  • Serve immediately: The coating naturally softens as it absorbs the sauce.
