- 450 g fresh green beans
- 3 tablespoons toasted sesame seeds
- 1½ tablespoons soy sauce
- 1 tablespoon granulated sugar
- 1 teaspoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon mirin
- 1 teaspoon grated ginger
- 1 small garlic clove, finely grated
- 1 teaspoon chili flakes
- Thinly sliced green onions for garnish
Prepare the Green Beans
Wash the green beans thoroughly.Trim both ends.If the beans are particularly long, cut them into approximately 2-inch pieces.Try to keep the pieces relatively similar in size so they cook evenly.
Prepare an Ice Bath
Fill a large bowl with cold water and several ice cubes.Set it aside. The ice bath will help stop the cooking process and preserve the green beans' bright color and crisp texture.
Boil the Green Beans
Bring a large pot of water to a boil.Add a small pinch of salt.Carefully add the green beans.Cook for approximately 3–5 minutes, depending on their thickness. The beans should be tender but still slightly crisp.
Transfer to the Ice Bath
Immediately remove the green beans from the boiling water.Transfer them to the ice bath.Allow them to cool for approximately 1–2 minutes.Drain thoroughly.Pat gently with a clean kitchen towel if necessary.
Toast the Sesame Seeds
If your sesame seeds are not already toasted, place them in a dry skillet over medium-low heat.Toast for approximately 2–3 minutes, stirring frequently.Remove them as soon as they become fragrant and lightly golden.Be careful because sesame seeds can burn quickly.
Grind the Sesame Seeds
Transfer the toasted sesame seeds to a mortar and pestle.Crush them until they become partially ground. They do not need to become a completely smooth paste.Leaving some seeds whole provides additional texture. If you do not have a mortar and pestle, use the bottom of a heavy glass or pulse the seeds briefly in a food processor.
Make the Sesame Dressing
Combine the ground sesame seeds, soy sauce, sugar, rice vinegar, sesame oil, and water in a bowl.Mix thoroughly. If using mirin, add it at this stage.Taste and adjust the sweetness or saltiness according to preference
Combine the Beans and Dressing
Place the drained green beans in a large bowl.Pour the sesame dressing over them.Toss gently until all the beans are evenly coated.
Let the Flavors Develop
Allow the dressed green beans to rest for approximately 5–10 minutes before serving. This gives the sesame dressing time to absorb into the vegetables.
Garnish
Transfer the beans to a serving bowl.Sprinkle with additional toasted sesame seeds.Add sliced green onions or a small pinch of chili flakes if desired.
Serve
Serve immediately, at room temperature, or chilled. For a traditional-style meal, serve alongside steamed rice, miso soup, grilled fish, or Japanese-style meat dishes.
- Fresh beans: Choose firm, bright green beans without soft or wrinkled spots.
- Don't overcook: The beans should remain crisp-tender rather than mushy.
- Ice bath: Chilling immediately helps preserve the beans' color and texture.
- Toast carefully: Sesame seeds can burn quickly.
- Fresh sesame: Freshly toasted and ground sesame provides the best flavor.
- Adjust sweetness: Japanese sesame dressings can be adjusted to taste.
- Drain well: Excess water can dilute the dressing.
- Rest before serving: A few minutes allows the dressing to cling to the beans and develop flavor.
