For the Burger Assembly
- 4 soft burger buns
- 4 lettuce leaves
- 4 tablespoons Japanese mayonnaise
- 1 teaspoon toasted sesame seeds
- Pickled cucumber or Japanese pickles, optional
- 4–8 thin tomato slices, optional
Prepare the Panko Mixture
Place the panko breadcrumbs in a small bowl.Add the milk and allow the breadcrumbs to absorb the liquid for approximately 2–3 minutes. This helps keep the beef patties soft and juicy.
Make the Burger Mixture
Place the ground beef in a large mixing bowl.Add the chopped onion, soy sauce, grated ginger, garlic, sesame oil, sugar, black pepper, salt, and softened panko mixture.Mix gently until the ingredients are evenly distributed.Avoid overmixing because excessive mixing can make the patties dense.
Shape the Patties
Divide the mixture into four equal portions.Shape each portion into a round patty slightly wider than the burger buns.Make a shallow indentation in the center of each patty using your thumb. This helps the patties maintain their shape as they cook.Place the patties in the refrigerator for about 10 minutes while preparing the sauce.
Prepare the Wafu Sauce
Combine the soy sauce, mirin, sake or water, brown sugar, grated ginger, and sesame oil in a small saucepan.Bring the mixture to a gentle simmer over medium-low heat.Cook for approximately 2–4 minutes until slightly thickened.Remove from the heat and set aside. The sauce will thicken further as it cools.
Caramelize the Onions
Heat the cooking oil and butter in a skillet over medium-low heat.Add the sliced onions and a small pinch of salt.Cook slowly for approximately 8–12 minutes, stirring occasionally.Add the brown sugar and continue cooking until the onions become soft, golden, and lightly caramelized.Set aside.
Cook the Beef Patties
Heat a large skillet, grill pan, or frying pan over medium heat.Add a small amount of oil if needed.Place the patties in the hot pan and cook until browned on the first side.Flip carefully and continue cooking until the burgers reach a safe internal temperature.Brush the cooked side with the Wafu sauce.Flip briefly and brush the other side with sauce as well.Allow the sauce to caramelize lightly without burning.
Toast the Burger Buns
Slice the buns in half.Place the cut sides down in the same skillet or on a grill.Toast for 1–2 minutes until lightly golden.A small amount of butter can be added before toasting for extra flavor.
Prepare the Mayo
Place the Japanese mayonnaise in a small bowl. For extra flavor, mix in a few drops of soy sauce or a small amount of toasted sesame oil.You can also add a pinch of shichimi togarashi for a spicy variation.
Assemble the Wafu Burgers
Spread Japanese mayonnaise over the toasted bottom buns.Add a lettuce leaf.Place the juicy Wafu beef patty on top.Add caramelized onions and optional tomato slices.Sprinkle with toasted sesame seeds.Add another drizzle of Wafu sauce if desired.Finish with the top bun.
Serve Immediately
Serve the burgers while they are hot and juicy.Pair them with fries, Japanese potato wedges, edamame, pickles, or a crisp cabbage salad.
- Do not overmix the beef: Gentle mixing produces a softer and juicier patty.
- Chill the patties: A short chilling period helps them hold their shape during cooking.
- Use good-quality beef: Ground beef with moderate fat content produces a more flavorful and juicy burger.
- Watch the Wafu sauce: The sugar can burn quickly, so cook the sauce over moderate heat.
- Toast the buns: Lightly toasted buns provide better texture and prevent them from becoming soggy.
- Use Japanese mayonnaise: It adds a rich, creamy, slightly tangy flavor that complements the Wafu sauce.
- Cook beef safely: Use a food thermometer to check that ground beef reaches a safe internal temperature.
- Assemble just before serving: Fresh assembly gives the burger the best texture.
