Ingredients
  

For the Noodles

  • 8 ounces (225 g) Korean sweet potato starch noodles
  • Water for boiling

For the Protein

  • 200 g thinly sliced beef, optional
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 clove garlic, minced

For the Vegetables

  • 1 medium carrot, julienned
  • 1 small onion, thinly sliced
  • 1 small zucchini, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 3 scallions, cut into short pieces
  • 2 tablespoons neutral cooking oil

For the Japchae Sauce

  • ¼ cup soy sauce
  • 2 tablespoons brown sugar or honey
  • 1½ tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon toasted sesame seeds

Instructions
 

Prepare the Noodles

  • Bring a large pot of water to a boil.
    Add the sweet potato starch noodles and cook according to the package instructions, usually until soft and chewy.
    Avoid overcooking the noodles.

Drain and Rinse

  • Drain the cooked noodles thoroughly.
    Rinse briefly with cool water if necessary to prevent them from sticking together.

Prepare the Sauce

  • In a small bowl, combine the soy sauce, brown sugar or honey, sesame oil, and minced garlic.
    Mix until the sugar is dissolved.
    Set the sauce aside.

Prepare the Beef

  • If using beef, combine it with soy sauce, sesame oil, sugar, and minced garlic.
    Mix well and allow it to marinate for approximately 10 minutes.

Cook the Beef

  • Heat a skillet over medium-high heat.
    Cook the marinated beef until browned and thoroughly cooked.
    Remove it from the pan and set it aside.

Cook the Mushrooms

  • Add a small amount of oil to the skillet.
    Cook the sliced mushrooms until tender and lightly browned.
    Set aside.

Cook the Carrots

  • Stir-fry the julienned carrots for approximately 2–3 minutes.
    They should become slightly tender while retaining some texture.

Prepare the Spinach

  • Blanch the spinach briefly in boiling water.
    Drain and gently squeeze out excess moisture.

Combine the Noodles and Sauce

  • Place the cooked noodles in a large mixing bowl.
    Pour the prepared Japchae sauce over the noodles.
    Toss until evenly coated.

Toss Everything Together

  • Gently toss the ingredients until the vegetables, noodles, and protein are evenly distributed.

Add Sesame Seeds

  • Sprinkle toasted sesame seeds over the noodles.

Serve

  • Serve the Yummy Korean-Style Glass Noodles warm or at room temperature.
