- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1–2 fresh jalapeños, diced (optional for extra heat)
- 8 oz processed cheese (Velveeta or similar), cubed
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ¼ teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Tortilla chips or bread for serving
In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
Add chopped onion and garlic; sauté for 2–3 minutes until fragrant.
Stir in chili powder, cumin, paprika, salt, and pepper.
Pour in diced tomatoes with chilies and mix well.
Reduce heat to low and add processed cheese, cheddar, and cream cheese.
Stir continuously until all cheeses melt and the dip becomes smooth and creamy.
Adjust seasoning as needed and simmer for 2–3 minutes.
