For the Chicken Wings
- 2 lb (900 g) chicken wings
- 1 tablespoon vegetable oil
- 1 tablespoon fresh lime juice
For the Jerk Marinade
- 4 scallions, roughly chopped
- 3 garlic cloves
- 1 tablespoon fresh ginger, grated
- 1–2 Scotch bonnet peppers
- 2 tablespoons fresh thyme leaves
- 2 teaspoons ground allspice
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons orange juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon vegetable oil
Finishing Sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon reserved jerk marinade, boiled thoroughly before use
- ½ teaspoon hot sauce
Prepare the Chicken Wings
Pat the wings completely dry using paper towels.If using whole wings, separate them into drumettes and flats if desired. Remove the wing tips and save them for stock.
Make the Jerk Marinade
Add scallions, garlic, ginger, Scotch bonnet peppers, thyme, allspice, paprika, black pepper, salt, cinnamon, nutmeg, brown sugar, soy sauce, Worcestershire sauce, lime juice, orange juice, vinegar, and oil to a blender or food processor.Blend until you have a thick, aromatic paste.
Marinate the Wings
Place the chicken wings in a large bowl or resealable food-safe bag.Pour the jerk marinade over the wings and toss until every piece is thoroughly coated.Cover and refrigerate for at least 4 hours, preferably overnight
Preheat the Oven
Preheat the oven to 425°F (220°C).Line a large baking sheet with foil or parchment and place a wire rack on top.The rack allows hot air to circulate underneath the wings and helps create a crispier exterior.
Arrange the Wings
Remove the wings from the marinade and allow excess marinade to drip off.Arrange them in a single layer on the wire rack.Don't overcrowd the wings.

Bake for approximately 35–45 minutes, turning the wings halfway through cooking.Continue baking until the skin is browned, crisp, and caramelized.
Crisp the Wings
For extra-crispy edges, switch the oven to broil for approximately 1–3 minutes at the end.Watch closely because the brown sugar in the marinade can burn quickly.
Finish and Serve
For an optional sweet-spicy glaze, combine honey and lime juice with a small amount of properly boiled reserved marinade.Brush lightly over the cooked wings.Serve immediately with lime wedges and fresh scallions.
