Ingredients
  

For the Jerk Marinade

  • 4 bone-in or boneless pork chops
  • 2 tablespoons Jamaican jerk seasoning
  • 2 scallions, roughly chopped
  • 3 cloves garlic
  • 1 tablespoon fresh ginger, grated
  • 1–2 Scotch bonnet peppers, adjusted to your preferred heat level
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground allspice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt, or to taste

Garnishes

  • Fresh thyme
  • Sliced scallions
  • Lime wedges
  • Grilled pineapple

Instructions
 

Prepare the Pork Chops

  • Pat the pork chops dry with paper towels.
    Trim any excess fat if desired.
    Dry pork chops help the marinade adhere more effectively.

Prepare the Jerk Marinade

  • Add the scallions, garlic, ginger, Scotch bonnet peppers, thyme, brown sugar, soy sauce, lime juice, oil, allspice, cinnamon, black pepper, and salt to a blender or food processor.
    Blend until a thick, aromatic paste forms.

Adjust the Heat

  • Scotch bonnet peppers can be extremely hot.
    For a milder marinade, use less pepper and remove the seeds and membranes.

4. Coat the Pork Chops

  • Place the pork chops in a large bowl or resealable food-safe bag.
    Rub the jerk marinade thoroughly over every piece.
    Make sure the pork is evenly coated.

Marinate

  • Cover and refrigerate for at least 2 hours.
    For deeper flavor, marinate for 6–8 hours or overnight.

Prepare for Cooking

  • Remove the pork chops from the refrigerator approximately 15–20 minutes before cooking.
    Preheat your grill to medium-high heat.

Grill the Pork Chops

  • Place the pork chops on the hot grill.
    Cook for approximately 5–7 minutes per side, depending on their thickness.

Watch for Charring

  • Jerk marinades often contain sugar, which can caramelize quickly.
    Move the pork chops to a cooler area of the grill if they begin to darken too quickly.

Rest the Pork

  • Remove the pork chops from the grill.
    Allow them to rest for approximately 3–5 minutes before serving.
    This helps the juices redistribute throughout the meat.

Garnish

  • Sprinkle with fresh thyme and sliced scallions.
    Serve with fresh lime wedges.

  • Pork chops: Bone-in pork chops tend to remain especially juicy and flavorful.
  • Marinating: Longer marinating produces deeper flavor.
  • Scotch bonnet: Adjust the amount carefully because these peppers are very hot.
