Kadak Talawa Gosht is a crispy and spicy fried mutton dish, rich in bold flavors and aromatic spices. A perfect delicacy for meat lovers, this dish is best enjoyed with naan, paratha, or as a side dish.

- 500 gram mutton (bone-in, cut into small pieces)
- 2 tbsp ginger-garlic paste
- 1 tbsp lemon juice
- 1 tsp salt (adjust to taste)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp black pepper
- ½ tsp fennel powder
- 2 tbsp yogurt
- 1 egg (beaten)
- 2 tbsp rice flour or cornflour (for extra crispiness)
- Oil for deep frying
- Fresh coriander and lemon wedges for garnish
Marinate the Mutton: In a bowl, mix mutton pieces with ginger-garlic paste, lemon juice, salt, turmeric, red chili powder, cumin powder, coriander powder, fennel powder, garam masala, black pepper, and yogurt. Marinate for at least 2 hours (overnight for best results).
Pre-Cook the Mutton: Add marinated mutton to a pressure cooker with ½ cup water and cook for 3-4 whistles until tender. Let it cool.
Prepare for Frying: Once the mutton is cooked, mix it with a beaten egg and rice flour to ensure a crispy coating.
Deep Fry the Mutton: Heat oil in a pan and fry the mutton pieces on medium heat until crispy and golden brown.
Drain & Serve: Remove from oil, drain on paper towels, and garnish with fresh coriander and lemon wedges.
