Kalbi-Style Braised Beef Cheek Tacos are a flavorful Korean-inspired fusion dish featuring tender, slow-cooked beef cheek. The beef is braised in a sweet and savory mixture of soy sauce, garlic, ginger, sesame oil, and other aromatic ingredients until it becomes incredibly soft. The shredded beef is then served in warm tortillas with fresh cabbage, spring onions, sesame seeds, and spicy toppings. Ingredients
  

For the Braised Beef

  • 1 kg beef cheeks, trimmed
  • 2 tablespoons neutral cooking oil
  • 1 large onion, roughly chopped
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ½ cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 medium Asian pear or apple, grated
  • 2 cups beef broth
  • 1 teaspoon black pepper
  • 2 spring onions, cut into large pieces

For the Tacos

  • 12 small corn or flour tortillas
  • 2 cups shredded cabbage
  • 1 medium carrot, julienned
  • 2 spring onions, thinly sliced
  • 1 tablespoon sesame seeds

Instructions
 

Prepare the Beef

  • Pat the beef cheeks dry and season them lightly with black pepper. Heat the cooking oil in a heavy-bottomed pot over medium-high heat.

Sear the Beef

  • Add the beef cheeks and sear them on all sides until they develop a deep brown crust. Remove the beef and set it aside.

Prepare the Aromatics

  • In the same pot, add the onion, garlic, and ginger. Cook for a few minutes until fragrant and lightly softened.

Make the Braising Sauce

  • Add the soy sauce, brown sugar, honey, sesame oil, rice vinegar, grated pear or apple, and beef broth. Stir well until the ingredients are combined.

Braise the Beef

  • Return the beef cheeks to the pot and add the spring onions. Bring the liquid to a gentle simmer.
    Cover the pot and cook on low heat for approximately 2½–3 hours, or until the beef becomes extremely tender.

Shred the Beef

  • Remove the beef cheeks from the braising liquid and shred them using two forks.

Reduce the Sauce

  • Simmer the remaining braising liquid uncovered until it thickens slightly. Return the shredded beef to the sauce and mix well.

Warm the Tortillas

  • Warm the tortillas in a dry skillet or directly over a low flame until soft and lightly toasted.

Assemble the Tacos

  • Fill each warm tortilla with the braised beef. Top with cabbage, carrots, spring onions, sesame seeds, and the optional gochujang sauce.
    Serve immediately.

Notes

  • Beef cheeks require slow cooking to become tender.
  • Do not rush the braising process.
  • Searing the beef adds a deeper and richer flavor.
  • Asian pear or apple provides natural sweetness and helps tenderize the meat.
  • Check the liquid level occasionally during braising.
  • Shred the beef only after it becomes fork-tender.
  • Reduce the braising liquid for a richer sauce.
  • Assemble the tacos just before serving to maintain the best texture.
