Ingredients
  

For the Kecap Manis

  • 1 cup regular naturally brewed soy sauce
  • ¾ cup palm sugar, grated or finely chopped
  • ¼ cup water
  • 2 cloves garlic, lightly crushed
  • 1 star anise
  • 1 small cinnamon stick
  • ½ teaspoon ground coriander
  • 1 small piece fresh ginger, sliced
  • 1 tablespoon tamarind pulp or tamarind paste
  • 1 tablespoon molasses, optional
  • 1 teaspoon toasted sesame oil, optional

Optional Spices

  • 2 whole cloves
  • 1 small piece galangal
  • 1 kaffir lime leaf
  • 1 small dried chili
  • 1 teaspoon fennel seeds

Instructions
 

Prepare the Palm Sugar

  • If using a large block of palm sugar, chop or grate it into small pieces.
    Smaller pieces dissolve much more quickly and evenly.
    If the sugar is very hard, use a sturdy knife or grater carefully.

Combine the Ingredients

  • Place the soy sauce, palm sugar, water, crushed garlic, star anise, cinnamon stick, coriander, ginger, and tamarind into a small heavy-bottomed saucepan.
    Add molasses if you want a darker, richer caramel flavor.
    Stir everything together.

Begin Heating

  • Place the saucepan over medium-low heat.
    Warm the mixture slowly, stirring frequently.
    The palm sugar should gradually dissolve into the soy sauce.
    Avoid bringing the mixture to a rapid boil.

Simmer Gently

  • Once the sugar has completely dissolved, reduce the heat to low.
    Allow the mixture to simmer gently for approximately 20–30 minutes.
    Stir occasionally.
    As the water evaporates, the sauce will become darker, thicker, and more concentrated.

Remove the Aromatics

  • Turn off the heat.
    Carefully remove the garlic, ginger, star anise, cinnamon stick, and any other whole spices.
    For an especially smooth sauce, strain the mixture through a fine-mesh sieve.

Cool the Sauce

  • Allow the kecap manis to cool at room temperature for approximately 15 minutes.
    It will continue thickening as it cools.
    If the sauce becomes too thick, stir in a small amount of warm water.

Taste and Adjust

  • Taste the sauce once it has cooled slightly.
    If it is too salty, add a little more palm sugar or water.
    If it is not sweet enough, add a little additional dissolved palm sugar.
    If you want more tanginess, add a tiny amount of tamarind.
    Make adjustments gradually because the flavor becomes more concentrated during storage.

Transfer to a Jar

  • Pour the cooled kecap manis into a clean, dry glass jar or bottle.
    Allow it to cool completely before sealing.
    Store in the refrigerator.

Notes

  • Use naturally brewed soy sauce: A good-quality soy sauce gives the finished sauce better depth and complexity.
  • Palm sugar is traditional: It provides a distinctive caramel-like flavor that ordinary white sugar cannot completely reproduce.
  • Do not boil aggressively: High heat can cause the sugar to scorch and make the sauce bitter.
  • Remember that it thickens: Stop reducing while the sauce is still slightly thinner than your desired final consistency.
