Ingredients
  

  • 4 medium russet potatoes, diced
  • 1 medium onion, finely chopped
  • 3 tablespoons vegetable oil or bacon grease
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 2 tablespoons chopped parsley (optional)

Instructions
 

  • Wash, peel (optional), and dice the potatoes into small cubes.
  • Place potatoes in a pot of salted water and parboil for 5–7 minutes until slightly tender.
  • Drain thoroughly and allow the potatoes to dry for a few minutes.
  • Heat oil or bacon grease in a large cast-iron skillet over medium-high heat.
  • Add potatoes in a single layer and cook without stirring for 4–5 minutes.
  • Flip and continue cooking until all sides become golden brown and crispy.
  • Add chopped onions and seasonings. Stir occasionally until onions become soft and caramelized.
  • Garnish with parsley and serve hot.
