- 2 cups all-purpose flour
- ½ cup unsalted butter
- ¾ cup granulated sugar
- 1 cup water
- 1 teaspoon vanilla extract, optional
- ¼ cup chopped walnuts or pistachios, optional
- ½ teaspoon ground cinnamon, optional
- A pinch of salt
First, combine the sugar and water in a saucepan. Heat gently until the sugar dissolves completely. Stir occasionally, then remove the syrup from the heat. Keep it warm while preparing the flour mixture.
Next, melt the butter in a heavy-bottomed pan over low heat. Add the flour gradually and stir continuously. Cook for approximately 15–20 minutes until the flour turns lightly golden and smells nutty.
Carefully pour the warm syrup into the toasted flour mixture. Stir continuously because the mixture may bubble. Continue cooking until the liquid absorbs and the halva becomes thick and cohesive.
Stir in the vanilla extract, if using. Add chopped walnuts or pistachios for extra crunch. Additionally, a small pinch of cinnamon creates a pleasant warming flavor.
Transfer the warm mixture into a lightly greased tray. Press it evenly using the back of a spoon or spatula. Allow it to cool until firm enough to cut.
Finally, cut the cooled helva into squares or diamond-shaped pieces. Arrange them on a serving plate and sprinkle with chopped pistachios. Serve with Turkish tea or coffee.

- Add the syrup carefully to avoid splashing.
- Adjust the sugar slightly according to your preference.
