Ingredients
  

  • 4 piecs Chicken Thighs: Fresh, bone-in, skin-on
  • 2 cups Flour (for coating)
  • 1 Egg
  • 1 cup Buttermilk
  • 1 tablespoon Salt
  • 1 tbsp Black Pepper
  • 1 tbsp White Pepper
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Celery Salt
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Ground Ginger

Instructions
 

  • Prepare the Chicken:
    Wash the chicken thighs thoroughly and pat them dry with a paper towel.Trim any excess fat if necessary.
  • Make the Marinade:
    In a bowl, whisk together buttermilk and the egg.Add a pinch of salt and pepper to the mixture.Submerge the chicken thighs in the marinade, cover, and refrigerate for at least 2 hours (overnight for best results).
  • Prepare the Coating:
    In a large mixing bowl, combine the flour, paprika, garlic powder, onion powder, salt, black pepper, white pepper, and cayenne pepper.Mix thoroughly to ensure even distribution of spices.
  • Coat the Chicken:
    Remove the marinated chicken thighs from the fridge.Take one piece at a time, allowing excess buttermilk to drip off, and coat it evenly in the flour mixture.Press the flour onto the chicken to form a thick, crispy coating.Place the coated chicken on a tray and let it rest for 10 minutes to help the coating stick.
  • Heat the Oil:
    Fill a deep frying pan or pot with enough oil to submerge the chicken.Heat the oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.
  • Fry the Chicken:
    Carefully place the chicken thighs into the hot oil, a few pieces at a time, to avoid overcrowding.Fry for 12–15 minutes, turning occasionally, until golden brown and crispy.Check that the internal temperature of the chicken reaches 165°F (75°C).
  • Drain and Serve:
    Remove the chicken from the oil and place it on a wire rack or paper towel to drain excess oil.Serve hot with your favorite dipping sauces or side dishes.
