Ingredients
  

For the Chicken Katsu

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1½ cups panko breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon garlic powder, optional
  • ½ teaspoon onion powder, optional
  • Vegetable oil, for shallow frying

For the Mild Katsu Sauce

  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

For Serving

  • Steamed white rice
  • Finely shredded cabbage
  • Cucumber slices
  • Steamed broccoli
  • Sweet corn
  • Carrot sticks

Instructions
 

Prepare the Chicken

  • Place each chicken breast between two sheets of plastic wrap or parchment paper.
    Gently pound the chicken using a meat mallet until it is approximately ½ inch (1–1.5 cm) thick.
    Try to make the pieces an even thickness so they cook evenly.

Season the Chicken

  • Lightly season both sides of the chicken with salt and pepper.
    For younger children, you can keep the seasoning very simple and omit the black pepper.

Set Up the Coating Station

  • Place the flour in one shallow bowl.
    Beat the eggs in a second bowl.
    Place the panko breadcrumbs in a third bowl.
    Add garlic powder and onion powder to the panko if desired.

Coat the Chicken

  • Dip each chicken breast into the flour and shake off the excess.
    Next, dip it into the beaten egg.
    Finally, press it gently into the panko breadcrumbs, making sure the entire surface is coated.
    Do not press too aggressively, as keeping some of the panko pieces loose helps create a crispier coating.

Heat the Oil

  • Add enough vegetable oil to a large skillet to create a shallow layer.
    Heat the oil over medium to medium-high heat.
    The oil should be hot enough for the breadcrumbs to sizzle immediately when they touch the surface.

Cook the Chicken

  • Carefully place the coated chicken into the hot oil.
    Cook for approximately 4–5 minutes per side, depending on thickness.
    The exterior should become golden brown and crispy.
    The chicken should reach an internal temperature of 165°F (74°C) for food safety.

Drain the Chicken

  • Transfer the cooked chicken to a wire rack or a plate lined with paper towels.
    Allow it to rest for a few minutes before slicing.

Make the Mild Katsu Sauce

  • Combine ketchup, Worcestershire sauce, soy sauce, honey, rice vinegar, and sesame oil in a small bowl.
    Mix until smooth.
    Taste and adjust the sweetness if desired.
    For very young children, you can simply serve ketchup alongside the chicken instead.

Slice and Serve

  • Slice the chicken katsu into strips.
    Serve with steamed rice, shredded cabbage, vegetables, and the mild dipping sauce.
    For children, cut the chicken into smaller bite-sized pieces if appropriate.

Notes

  • Pound the chicken evenly: Uniform thickness helps prevent overcooking.
  • Use panko breadcrumbs: Japanese panko produces a lighter and crunchier coating.
  • Keep seasoning mild: Adjust pepper and spices according to your child's preference.
  • Don't overcrowd the pan: Cook in batches if necessary.
  • Maintain moderate heat: Excessively high heat can burn the breadcrumbs before the chicken cooks.
  • Check the internal temperature: Chicken should reach 165°F (74°C).
  • Let the chicken rest: A short resting period helps retain its juices.
