- 12 oz (340g) kielbasa sausage, sliced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups (950ml) chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups (475ml) tomato sauce
- 9 oz (250g) cheese tortellini (fresh or frozen)
- 1 tsp Italian seasoning
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1 cup (100g) fresh spinach (optional)
- 1/2 cup (50g) grated Parmesan cheese (for serving)
Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned (about 5 minutes). Remove and set aside.
In the same pot, add the diced onion and cook until soft (about 3-4 minutes). Stir in the minced garlic and cook for 1 more minute.
Pour in the chicken broth, diced tomatoes, and tomato sauce. Stir to combine.
Return the browned kielbasa to the pot and season with Italian seasoning, salt, and black pepper.
Bring the soup to a boil, then reduce the heat and simmer for 15 minutes.
Add the tortellini and cook according to package instructions (about 5-7 minutes for fresh or 8-10 minutes for frozen).
If using, stir in the fresh spinach during the last 2 minutes of cooking until wilted.
Remove from heat and let the soup cool slightly before serving.
Ladle into bowls and garnish with grated Parmesan cheese. Enjoy!
