Kielbasa Tortellini Soup

Ingredients
  

  • 12 oz (340g) kielbasa sausage, sliced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups (950ml) chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups (475ml) tomato sauce
  • 9 oz (250g) cheese tortellini (fresh or frozen)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 cup (100g) fresh spinach (optional)
  • 1/2 cup (50g) grated Parmesan cheese (for serving)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the sliced kielbasa and cook until browned (about 5 minutes). Remove and set aside.
  • In the same pot, add the diced onion and cook until soft (about 3-4 minutes). Stir in the minced garlic and cook for 1 more minute.
  • Pour in the chicken broth, diced tomatoes, and tomato sauce. Stir to combine.
  • Return the browned kielbasa to the pot and season with Italian seasoning, salt, and black pepper.
  • Bring the soup to a boil, then reduce the heat and simmer for 15 minutes.
  • Add the tortellini and cook according to package instructions (about 5-7 minutes for fresh or 8-10 minutes for frozen).
  • If using, stir in the fresh spinach during the last 2 minutes of cooking until wilted.
  • Remove from heat and let the soup cool slightly before serving.
  • Ladle into bowls and garnish with grated Parmesan cheese. Enjoy!

Notes

  • You can substitute turkey kielbasa for a lighter option.
  • For a creamier texture, add 1/2 cup of heavy cream before serving.
