For the Chicken Filling
- 3 cups cooked shredded chicken
- 1 tablespoon olive oil or butter
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Creamy Sauce
- 1 can (10.5 ounces) cream of chicken soup
- 1 can (10.5 ounces) cream of mushroom soup
- ½ cup chicken broth
- ½ cup sour cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon chili powder
For Layering
- 12–14 corn tortillas, cut or torn into pieces
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup shredded Mexican cheese blend, optional
Preheat the Oven
Preheat your oven to 375°F (190°C).Lightly grease a 9×13-inch baking dish with cooking spray, butter, or a small amount of olive oil.
Sauté the Vegetables
Heat olive oil or butter in a large skillet over medium heat.Add the diced onion and bell peppers. Cook for about 5–7 minutes, stirring occasionally, until the vegetables begin to soften.Add the minced garlic and cook for another 30–60 seconds.
Season the Chicken Mixture
Add the shredded chicken to the skillet.Stir in the chili powder, cumin, smoked paprika, salt, and black pepper.Add the diced tomatoes with green chilies and stir well. Cook for approximately 3–4 minutes so the flavors can combine.Remove the skillet from the heat.
Make the Creamy Sauce
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, chicken broth, and sour cream.Add garlic powder, onion powder, chili powder, and black pepper.Whisk until smooth and creamy.
Start the First Layer
