Ingredients
  

  • ¼ cup soy sauce
  • 3 tablespoons gochujang
  • 3 tablespoons brown sugar or honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, finely minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons water
  • 1 tablespoon tomato paste
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon finely chopped scallions
  • ½ teaspoon black pepper

Instructions
 

Prepare the Aromatics

  • Finely mince the garlic.
    Peel and grate the fresh ginger.
    Thinly slice the scallions.

Combine the Main Ingredients

  • Add the soy sauce, gochujang, brown sugar or honey, rice vinegar, sesame oil, garlic, ginger, water, tomato paste, sesame seeds, scallions, and black pepper to a small saucepan.

Mix Thoroughly

  • Whisk all the ingredients together until the gochujang and sweetener are well incorporated.

Heat the Sauce

  • Place the saucepan over medium-low heat.
    Bring the sauce to a gentle simmer.

Adjust the Thickness

  • For a thicker Korean BBQ glaze, mix cornstarch with water.
    Add the slurry gradually while stirring the sauce.
    Simmer for another 1–2 minutes until thickened.

Adjust the Flavor

  • Taste the sauce carefully.
    Add more honey or brown sugar for sweetness.
    Add additional gochujang for heat.
    Add a little water if the sauce becomes too thick.

Cool the Sauce

  • Remove the saucepan from the heat.
    Allow the sauce to cool slightly before using it as a marinade or dipping sauce.

Use as a Marinade

  • Coat chicken, beef, pork, or tofu with the sauce.
    Allow the ingredients to marinate before cooking for deeper flavor.

Serve

  • Serve the sauce warm or at room temperature with your favorite Korean-inspired dishes.

  • Gochujang: Different brands can vary in heat, sweetness, and saltiness.
  • Soy sauce: Low-sodium soy sauce gives you greater control over the salt level.
