Ingredients
  

Main Ingredients

  • 600 g Korean soft tofu
  • 200 g pork, beef, or mixed seafood
  • 1 tablespoon vegetable oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, finely chopped
  • 1 small zucchini, sliced
  • 1 cup mushrooms, sliced
  • 2 spring onions, chopped
  • 4 eggs
  • 4 cups vegetable, chicken, or anchovy broth

Seasonings

  • 2 tablespoons Korean red chili flakes (gochugaru)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon Korean soup soy sauce or additional regular soy sauce
  • Salt, to taste
  • Black pepper, to taste

Instructions
 

Prepare the Ingredients

  • Slice the vegetables and prepare your preferred protein. Cut the spring onions and keep them ready for garnishing.

Make the Chili Oil

  • Heat vegetable oil and sesame oil in a large pot over medium-low heat. Add the Korean chili flakes and stir briefly to release their flavor without burning them.

Add Garlic and Protein

  • Add the garlic and your chosen pork, beef, or seafood. Cook for several minutes until the protein is lightly cooked and fragrant.

Add Vegetables

  • Add the onions, zucchini, and mushrooms. Stir everything together for approximately 2–3 minutes.

Add the Soft Tofu

  • Carefully add the soft tofu in large spoonfuls. Avoid stirring too vigorously because the tofu is delicate.

Add the Egg

  • Crack an egg into the simmering stew shortly before serving. Allow it to cook according to your preferred consistency.

Garnish and Serve

  • Sprinkle with chopped spring onions and serve immediately while the stew is bubbling hot.

  • Handle the tofu gently to prevent it from breaking apart.
  • Do not burn the gochugaru while making the chili oil.
