Ingredients
  

  • 1 lamb breast (about 2 lbs/900g)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and black pepper, to taste
  • 1 cup chicken or vegetable stock
  • 2 tbsp lemon juice
  • Assorted vegetables like carrots, onions, and potatoes, cut into chunks optional

Instructions
 

  • 1. Prepare the Lamb Breast
    Preheat your oven to 325°F (160°C).Pat the lamb breast dry with paper towels and trim any excess fat if necessary.
  • 2. Create the Marinade
    Combine olive oil, garlic, rosemary, thyme, smoked paprika, cumin, salt, and pepper in a bowl.Rub the marinade evenly over the lamb, coating it thoroughly.
  • 3. Sear the Lamb
    Heat a large ovenproof skillet or roasting pan over medium-high heat.Sear the lamb, skin-side down, for 3-4 minutes until golden brown. Flip and sear the other side.
  • 4. Roast the Lamb
    Arrange optional vegetables around the lamb in the roasting pan.Add chicken or vegetable stock and lemon juice to the pan. Cover tightly with foil or a lid.
  • 5. Cook and Baste
    Roast in the oven for 2 hours, basting with pan juices every 30 minutes.
  • 6. Crisp the Skin (Optional)
    Increase the oven temperature to 400°F (200°C).Remove the foil and roast for an additional 20-30 minutes until the skin is crispy.
  • 7. Rest and ServeAllow the lamb breast to rest for 10 minutes before slicing.Serve with roasted vegetables and drizzle with the flavorful pan juices.
