Ingredients
  

For the Patties

  • 2 lbs (900 g) ground lamb
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon olive oil

Spice Blend

  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground fennel seeds
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cayenne pepper (adjust to taste)
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • In a large mixing bowl, combine the ground lamb, garlic, parsley, cilantro, olive oil, and all the spices.
  • Mix gently until the ingredients are evenly incorporated without overworking the meat.
  • Divide the mixture into six equal portions.
  • Shape each portion into a thick oval or round patty.
  • Preheat the grill to medium-high heat.
  • Lightly oil the grill grates.
  • Grill the patties for 5–6 minutes per side, or until they reach an internal temperature of 160°F (71°C).
  • Let the patties rest for 5 minutes before serving.
  • Serve with warm flatbread, couscous, yogurt sauce, and fresh vegetables.
