Ingredients
  

For the Chicken Marinade

  • 2 pounds chicken thighs, drumsticks, or split chicken halves
  • 3 stalks lemongrass, finely minced
  • 5 garlic cloves, minced
  • 2 shallots, finely chopped
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon chili flakes
  • 2 tablespoons vegetable oil

Optional Garnish

  • Fresh cilantro
  • Lime wedges
  • Sliced red chilies
  • Sticky rice for serving

Instructions
 

  • In a large bowl, combine lemongrass, garlic, shallots, fish sauce, soy sauce, oyster sauce, lime juice, brown sugar, black pepper, chili flakes, and vegetable oil.
  • Add chicken pieces and coat thoroughly with the marinade. Cover and refrigerate for at least 4 hours or overnight for deeper flavor.
  • Heat grill to medium heat and lightly oil the grates.
  • Place chicken on the grill and cook for 30–35 minutes, turning occasionally until beautifully charred and fully cooked.
  • Allow slight charring on the edges for authentic street-food flavor while avoiding excessive burning.
  • Remove chicken from the grill and let rest for 5 minutes before serving.
  • Serve hot with sticky rice, lime wedges, cilantro, and spicy dipping sauce.
